does anybody out there buy space eggs
I seem to have acquired rather a lot, but I don't see anyone buying them..??

There are missions you can do that will unlock the illegal wares vendor, they are found while scaning stations marked by red sparks.
But you can craft caviar at a bench and sell them to the vendors on space stations normaly.

Even without crafting them you can sell them to Traders (I guess it depends on Faction, I think Teladi Station traders are fine with them, cant remember the station I was on when I first sold some, but it was early game possibly in Grand exchange)
But the price of the product after crafting is well worth keeping them until you have enough.
If you have lots, go to a crafting bench and make much profitsss.
Aswell as random drops from criminals, you can also find them on mini asteroids, go scan an area with the long range ping, look at your map for question marks, and when you hover you mouse pointer over them occasionally you will find one that has space eggs

If you use mining lasers on some of the bigger asteroids, when they explode they will sometimes produce the smaller asteroids with spacefly eggs, lodestones, and unstable crystals.

If 'rather a lot' equals 25 you might want to make caviar which is worth a cool million to sell.

I found that bombarding mass traffic at an enemy stations with heavy dumbfire missiles yields a ton of eggs.
Just fly near the dock and wait until they pile up. Blow up 10 at a time. Then wait again until they refill. Repeat.
Preferably a station without missile turrets that are annoying.
