When ships are assigned to a "mother ship" like carrier but also smaller ones, will the ships dock to the mother ship before they travel a bigger distance, no matter if they would travel faster on their own? Or will all undocked ships try to reach the target as fast as possible? Is there a difference when I give an attack or move order? Is it important how far the target is?
Background is that I might remove travel speeds of S sized ships completely. But this would only work if they would automatically dock at the "mother ship" before moving, so they will reach the target at the same time and undock.

Its a good question, I have seen this happen, but I am unsure if it happens consistently. I have also seen the ships undock on entering a new sector, even though it was not the final destination.
I think a lot of AI behaviour could be made more explicit and made in to commands for use by players.

IME the behaviour varies.
Pre-1.60, I had 3-4 fighters (mixed race/model) assigned to an Argon Magnetar and on the most part the following happened:-
I gather that 1.60 was meant to address the perpetual catch up situation (based on the change logs - assuming I understood the intended meaning correctly), but I have not checked the behaviour since then.

- Fighters launch and escort the larger ship
- Larger ship reaches system exit
- Fighters dock with the larger ship
- Larger ship leaves the system
