Carrier fighters X3TC
I have a tokyo with a full compliment of fighters but in the xenon sector where it is defending my eqd (bait) I have 5x Osakas and 2x Boreas defending same. I have found that some fighters will go of to edge of sector attacking last surviving n or m would they stay closer to home if all the figters were made into a wing as these stray fighters are my only losses ?.
I suppose it's worth a shot, though I'd suggest going modified and looking up CODEA for TC. It keeps fighters in small groups, usually of two so that you don't get as many losses.

That does work pretty well. If I have no spare wing, I prefer to make a couple of leaders and have about ten followers per leader, so I can easily assign them different tasks/targets.
However, due to the way it works, the ship most likely to die is the leader. So you have to regularly re-order and re-name things again.

Carrier fighters X3TC
I think that here i will compromise the advice given and form depearte wings and just order them as units ie gold yellow blue etc yhen just modify orders when i see what wing comand works best, or possibly lay a satellite within kill range of the m2's and carrier and have wing defend position or satellite
Generally "Attack all enemies" seems to work pretty poorly. If you use "Attack..." and pick a target in a group, the wing should take out the entire group.
Defend position works pretty well. Protect is usually too slow at actually responding to threats.
Wings automatically do what rwhiteruff described. It will assign one ship in the wing as a leader and all the rest will "Escort" it. But basically seems to be "attack target of" orders. Even if you change the settings about wing leaders and ships per group, this seems to create a pyramid style of basically the same orders.
If you have wings spare, I would highly advice using them. Simply for the fact it gives far more options that simply broadcasting orders.
