(1) When you're in the station build screen, if you click out of it without confirming your changes, a helpful little dialogue box appears and asks you if you're sure you want to leave. BUT, if you access the Encyclopedia from the station build screen and close out, any changes you might have made on the build screen are instantly gone without notice.
(2) When setting a default behaviour for a ship, usually you need to click "Confirm" before anything is changed. BUT, if you select Defend Position, the "Confirm" button is greyed out and unclickable. It turns out that this particular behavior doesn't need confirmation ... but, why? Consistency of UI expectations is important.

(1) Fixed in an upcoming version.
(2) You are wrong here. The Protect Position default behaviour is not automatically activated. The Confirm button is greyed out because you did not select a position yet. Click the empty blue box below the behaviour name to do so.
