Ex military personal from many countries are fighting in the Ukraine. I am guessing they have a variety of qualified people or can get them. It is a MASSIVE number, more than the allies sent to normandy on d day... a target where outside of defending forces, would be welcomed and fed by locals.
200,000 is a lot of troops. Anything more would be unwieldy and an absolute nightmare to supply.

Heck, even if you restrict it to actual invasions, there were something like 2 million invading troops during the invasion of Poland in WW2, and about 50% more than that during the invasion of France. If you don't have to send troops across the sea then it's a lot easier to maintain your supply lines!
Poland is now Ukraine logistic base - we send food, suplies, blood, weapons and ammo.
I am in no doubt that Ukrainians are giving Russians hard time but take these kinda of reports with big grain of salt.

I doubt they completely destroyed entire convoy, but most definetly landed several great hits to slow it down and demoralize it.
Seems like there's some call from the EU as well with Ursula von der Leyen saying "They're one of us" about Ukraine.
