You could always turn down the colour settings on your graphic card to black and white... 
I personally prefer the 'arty' and unscientific colouring scheme to everything as it nicely offsets those pesky space ships based on factual information. Besides which it makes for nice screen saver shots that even the wife can appreciate!

The thing is, no matter how colorful you make it, it doesnt mean its automatically "unrealistic".
Our eyes have evolved to take in specific wavelengths and our brain interprets them as what we call "colors". Now, imagine if we could actually take in all wavelengths, from infrared to gamma rays, and our brain had to somehow distinguish between them (more colors, or whatever you might call it, sadly we can not even imagine this concept).
Now, the universe would be so bursting at the seams with color and intensity that even World of Warcraft would seem gloomy and dark in comparison.

My point is, colorizing hubble images (as they call it, fake-color photos), or upping the saturation has nothing to do with being unrealistic. The only concept of "realism" in our minds come from our landlocked existance and evolution on this planet.
The universe looks like it does in the "fake color" photographs, the difference is that our eyes cant percieve it, hence we have to apply our known "colors" to these shorter and longer wavelengths that we cant see.
Short story, a pink eta carinae or a neon green one, if the image is captured with more than just visible light, is equally realistic, there's no color in our spectrum that is the "right" one.
It just grinds my gears when someone talks about realism when it comes to the colors in space. Our only basis is a tiny sliver of visible light.
